Salsify, sometimes called the vegetable Oyster has striking mauve flowers but I missed photographing them this year. However I was in the garden and noticed the seed heads had formed. They are rather like heavy duty dandelion clocks. The ripe heads form a sort of honeycomb effect before the seeds fall.
The plant is a member of the sunflower family.
I have grown Salsify for a number of years but I don’t think I will anymore as it does not do so well in the gritty soil of the raised vegetable beds. Instead of growing long roots they tend to divide making preparation tedious.
If you are preparing salsify once washed and peeled put the roots in water with vinegar in it as the flesh goes brown very quickly just like an apple will.
